Setting Up Your Kitchen For Gourmet Cooking

If you want to whip up great meals in your kitchen, you need to make sure you have a few basic necessities. A good selection of quality pots and pans and some useful kitchen gadgets and tools will have you whipping up gourmet meals with ease!

First off, you need to get a good set of pots and pans. At the minimum you will need a large frying pan, a small frying pan, a two-quart saucepan with cover, a one-quart saucepan with cover, and a stock pot for cooking soups and stews. It’s also a good idea to get a cover for at least one of the frying pans and if your budget allows.

When selecting your pots and pans remember that a better quality set will help you be a better cook. Cheap pans wear out and tend to burn the food so you really aren’t saving money if you go the cheap route. Good quality pots and pans, on the other hand, spread the heat evenly so that your food does not burn in some places but remain undercooked in others.

So how do you know if a pan is a good pan? Well, typically you do get what you pay for but make sure that your pans are sturdy and the bottoms are flat. Steer clear of aluminum pans and instead go for stainless steel with a porcelain coating.

If you select pans with a nonstick coating you need to take care when cooking on them. The fumes can be harmful to some pets and fatal to pet birds so never overheat them. Heat them up only as much as is necessary, and be sure to use plastic or wooden tools on them so you do not scratch the coating. If you need to scrub the pan for cleaning us a plastic or nylon net scrubber and avoid using steel wool pads.

Some other useful cooking devices for your kitchen include a wok, a crock pot, a toaster and of course a microwave. To process the food, you might want to pick up a food processor and blender as well as an electric mixer, and to cut roasts, an electric knife.

When you are cooking, you will need a good selection of wooden spoons to stir your creations with. Be sure to get a good variety of sizes and handle lengths. Wooden spoons are great because they are inexpensive, don’t get too hot to handle and won’t hurt your non stick cookware.

You also need a variety of spatulas in different shapes and sizes. A heavy spatula may be needed to flip your colossal gourmet burger, but you’ll want a lighter one to flip eggs. You’ll want narrow spatulas as well as wide ones so that you have a size for every job.

Whisks are another staple that no kitchen should be without and they come in a variety of sizes. They are great for mixing lightweight ingredients, and are easier to work with and clean than a mixer or blender.

A good set of knives is a must! It just does not pay to buy cheap ones as they wear out fast and make cutting almost impossible. With cheap dull knives you will be struggling to squash and rip your food instead of slicing through it with ease. Along with that, of course, you need a good cutting board to give you a flat work surface and protect your counters. Actually, it is a good idea to have more than one cutting board - keep one for cutting vegetables and another for meat that way you won’t have to worry about getting bacteria from the meat onto any veggies you plan to eat raw. Plastic cutting boards are a bit less porous and can be cleaned easier than the wood ones.

You also need to stock your kitchen with a set of measuring tools. You need measuring cups and spoons for dry ingredients. Additionally, you will need a measuring cup to measure liquids. For liquids, a two cup measure is most convenient. If you want to be accurate in your measurements for dietary reasons, buy a food scale to measure your portions.

You should also have a can opener for opening those cans that don’t have a pop top. They have electric ones, but I find that if you buy a good quality hand opener they are much easier to use and clean.

With kitchenware, you will find that it doesn’t pay to buy the cheapest item. The money you spend will more than make up for itself with longer lasting tools which are easier to use. Good quality kitchen tools can actually make the task of cooking easier!

Caribbean Food For Everyone

If you have ever tasted Caribbean food you then already know that the tastes of this type of food is amazing. There are so many people in the world that absolutely adore Caribbean food. Some of the most popular and most liked meals are the jerk chicken, (of course!); curry goat, and oxtail stew. The intriguing thing about Caribbean food is that the cooks of this fine cuisine take special care when cooking the food. They are always busy adding their special touches to add to the delight of whatever dish they are preparing. Not to leave out but some of the best salads from the Caribbean are also excellent, including Coleslaw, Potato and Green salads.

Caribbean foods are readily available in most grocery stores and supermarkets. Most of the time when searching for these foods, you will run across mainly fruits and vegetables. Fruits and vegetables are the most widely used types of foods throughout the Caribbean so it only makes sense as to what you would mainly find in a store. Every now and then though, you will run across one of the highly regarded sauces or seasonings used throughout the Caribbean cuisine. It does seem like that retailers put some kind of slow activity upon making these sauces and seasonings available throughout their stores to their customers.

Moving along to Caribbean drinks you will find out that some of them are the best you can find. Soft drinks, punches, and alcohol are most highly regarded of the drinks. Soursop, pineapple, and tropical fruit punches are just a few examples of delicious tasting drinks from the islands.

The most talked about thing about Caribbean food is probably the seasonings. This is where the food has gained its widespread popularity throughout the years. This is what the make the prepared meals so enticing to purchase and consume. The very thought of cooking up some jerk chicken and adding any type of Caribbean seasoning just makes your mouth water. The trick is to wash the meat a few times, then use vinegar or lemon to wash it up even further. After you have completed this you can add all or any type of your favorite seasoning to the meat. When finished, you would want to marinate the meat, preferably for 12 to 24 hours. After that it’s up to you on how creative you would want to get with the meat.

While most of the people from the Caribbean’s do cook their food at a moderate level, there are some islands in the West Indies that prefer cooking their food hot. What I mean is, that most of the people cook at a moderate “spicy” level while others will cook as spicy as they can handle. An example is that jerk seasoning is considered to be a “hot” spice, but if you sparingly use it throughout your dish then it does not have to be hot. Using pepper and hot pepper sauce is up to the discretion of the person going to eat the meal. Some sauces and seasonings are considered “mouth watering” hot, so be careful when thinking about the level of spice or seasoning that you want in your meal.

How To Make Prosciutto - Delicious Appetizer

During ancient times some unique and ingenious methods were developed for preservation of meat. In Europe pork is the meat of choice, producing a variety and acquired taste throughout the regions.

Prosciutto is one of the best known and widely used as appetizer in most of the gourmet restaurants. It is sliced paper thin and served with variety of foods such as cheese, pickled vegetables, smoked sausages etc. It is commonly used as party favorite when serving wine or other alcoholic beverages.

Simply put, Prosciutto is cured, smoked ham. To make Prosciutto start with fresh, whole pieces of ham. The bone should be taken out, but not necessary, as it will be easier to slice the finished product. The traditional method can take anywhere between 8 months up to 2 years for proper curing and drying. Smoking the ham is done in certain regions to provide added flavor as well as curing the meat faster.

There are basically 3 steps when making Prosciutto.

1. Brining
Place the pieces of ham in a large plastic container. Top it up with salt water, meat being submerged 2″-4″. The amount of salt you should use is 2-4 cups per gallon of water. Make sure to use sea salt or pickling salt only. Do not use the table salt as it contains Iodine. The temperature should be 32- 40 F (0-5C). If the outside temperature is warmer, place the container in the refrigerator. Leave the meat in this solution for approx 3-4 weeks. Mix the ham occasionally to equilibrate all of the ingredients.

2. Smoking
After 3-4 weeks rinse the ham under running cold water. Pat dry, and insert “S” hooks or piece of twine for hanging the meat in the smoke house.
This method is for cold-smoking of meats. There should be very little heat, and lot of smoke being produced. Hot smoke is not desired for this process.
To make a smoke house take 4 sheets of 4′X 8′ plywood. Make a box making sure to cover the top. Cut the bottom 3′ of one side using it as a door for the fire pit. Near the inner top secure a rod, broom stick will do, for hanging the meat. If added air circulation is needed drill some 1″-11/2” holes near the top.
Each day for 7-10 days start a smoldering fire in the pit. Use any type of hardwood you desire. Excellent flavors are obtained from fruitwood such as apple or cherry. You can use hickory, maple or oak wood. Just remember you do not want heat, only smoke.
Once the color is golden brown, or the smoke flavor is sufficient, stop with the fire.

3. Drying and Curing
This process takes the longest time. If the outside temperature is cold enough you can leave the meat in the smoke house for the drying. Cool fruit-cellars will suffice as well. The trick here is to have enough air circulation to dry the meat over 4-5 months.
Once the meat is completely cured, consistent color throughout the ham without any red showing, it is ready to eat.

Spanish cuisine originated in a fascinating country that features a culturally diverse and elaborate history that has evolved over hundreds of years. Spain is a rather mountainous region, with several ranges running throughout the country in different directions. This is also why Spanish cooking differs so much from one portion of the country to another.

Most Spanish cuisine is actually still prepared today just as it was a few hundred years ago, using the same ingredients and cooking methods. Throughout the years, influences from American and European foods became popular, with a Spanish flair, of course, creating an ever wider variety of tasty dishes. Today in the northern region of the country, meats and foods high in animal fats are a popular part of the diet, while in the southern portion there is more of a Mediterranean influence to the local cooking styles and cuisine.

The components of Spanish cuisine varies widely even today from geographical region to region, however, there are two main ingredients that remain a constant throughout the country; garlic and olive oil. Most Spanish recipes call for the use of olive oil or sometimes lard, but extra virgin olive oil is usually highly recommended.

Spain happens to be one of the world’s leading producers of olive oil as olives can be seen growing all over the southern portion of the land. The country is also known all around the world as being famous for its wine and many food festivals and fiestas. It is here that the tasty wine Sangria was first developed as an alternative to the simple grape wine.

Garlic and saffron are perhaps the most commonly used of the herbs and spices, but oregano, thyme and rosemary are also used frequently. Fish and seafood are also a big part of the meals prepared here as the country is surrounded by water on three sides. Local markets and restaurants offer everything from halibut to shrimp or even octopus.

To prepare most Spanish cuisine, you will need several large pots and deep frying pans along with numerous spatulas, tongs and serving spoons. Many recipes call for all of the meats to be cooked together as stews are one of the most prevalent types of dishes of Spanish cuisine. Deep serving dishes with lids will also be needed for Spanish soups. And many chefs will also use a coffee grinder to mix and grind the various spices and herbs that are used.

Stews are such an important part of Spanish cuisine that there are several words used to describe it. Cocido, pote, olla, guiso, estofado or escudella are all terms for stew. La escudella i carn d’olla, which is made from rice, noodles, vegetables and potatoes, and Pilota, a combination of beef, eggs, white beans and bread are other common choices among the local Spanish people.

Butifarra is a type of regional sausage that can be found in some areas along with a specially prepared pie called Empanada Gallega made from vegetables and either meats or fish. Chopped pork, roasted lamb, blood pudding and red beans, known as Ibeas are other common dishes eaten in Spain. And a pork sausage made with paprika called chorizo is a huge favorite among the Spanish people.

Spanish cuisine is also famous for its many sweet and decadent desserts as well. Tarta Compostelana made from almonds is a most popular choice as well as a host of other treats made with almonds such as cookies, cakes and pastries. In addition to wine, Spain is also one of the top producers of nuts such as walnuts, hazelnuts, and, of course, almonds.

Spanish wine and food is very diverse in its nature. All over Spain, the food is still cooked by hand with fresh ingredients from the market. These ingredients are available in Spanish food shops or from a grocery store anywhere in the world. Some urban centers in Spain, such as Madrid, are not the best places to go and enjoy hand cooked food with the ingredients fresh from the market. The truly fresh and hand cooked food is more readily available in the rural areas where open air markets still provide the right cultural flavor. Food is often cooked over a fire in the open, using a clay or brick oven.

Another part of Spanish culture is to offer snacks whenever drinks are being served. These snacks are called “tapas” and could be in the form of cheese, olives, or pork. In several bars in Spain, the cost of wine, beer, or sherry includes tapas.

Spanish cuisine also includes options for those with a sweet tooth. The traditional fried pastry dough snack known as “churro” is served with a hot chocolate dip.

There is a lot of variation in Spanish cuisine though the following traits are often found to be common in several recipes.

* Cooking takes place in olive oil or the oil is used raw.
* Meal preparation often begins with “sofrito”, a mixture of garlic, tomatoes, and onions cooked in olive oil.
* Seasonings are typically made from onions and garlic.
* Wine consumption with a meal is normal with most dishes as is eating bread.
* Salads are used heavily and especially during summer.
* Dessert is often fruit or dairy products. Cakes, etc. are reserved for special occasions.
